Recipe: Cinnamon French toast

Cinnamon on anything gets a vote from us! This French toast is high in protein, low in sugar, and takes only 10 minutes to make.

The eggs and whey protein powder give this recipe a muscle-building boost, making it an ideal breakfast for anyone who’s heading to the gym later in the day. Otherwise, whip it up whenever your sweet-tooth needs satisfying!

Ingredients:

French toast

  • 1 egg
  • 3 tbsp whey protein powder, vanilla or protein of your choice
  • 2 tsp almond milk, unsweetened
  • Ground cinnamon (to taste)
  • 1 ½ slices of rye bread (or bread of choice)
  • Cooking oil spray

Topping

  • 1 tbsp almond butter
  • 60 g (¼ cup) Greek yogurt
  • Drizzle of honey or maple syrup

Method:

  1. In a large shallow bowl or casserole dish, whisk the eggs, protein powder, almond milk and cinnamon together.
  2. Press the bread in the egg-protein mix and soak for 2-3 minutes. Turn the bread over to soak on both sides.
  3. Place a non-stick pan on medium heat and spray with oil. When hot, place each slice of bread on the pan. Cook for 2-3 minutes on each side, until golden and warm through.
  4. Enjoy right away with almond butter, creamy yoghurt and an extra dusting of cinnamon and drizzle of honey or maple.
  5. If prepping, cover and refrigerate. Reheat by placing on a hot pan to heat through.
