Recipe: Mediterranean chilli and spinach pizza

When the moon hits your eye like this Mediterranean chilli and spinach pizza pie, that’s amore.

This chilli and spinach pizza has it all: protein, carbs, and healthy fats. On top of that, it’s easy to assemble and has just eight, easy to find, ingredients – what more could you want? Well, to eat the pizza already, so let’s get to it!

Servings: 1
Time: 40 minutes
Allergens: Gluten, nuts

Ingredients

  • 1 wholemeal pizza base
  • 2 tablespoons of hummus
  • 1 cup of baby spinach
  • 1 tomato, thinly sliced
  • 4 eggs
  • 1 teaspoon of chilli flakes
  • Salt and pepper
  • Italian herbs

Method

  1. Preheat the oven to 180°C
  2. Spread hummus over the pizza base
  3. Top with baby spinach and tomato
  4. Crack the eggs evenly onto the pizza (close to the centre so they don’t drip off the edge) – Use a fork to break the yolk and spread the eggs over the pizza
  5. Sprinkle with chilli flakes, Italian herbs, salt and pepper
