Healthy banana and blueberry muffins

Bananas are a nutritional powerhouse, containing B6, vitamin C, potassium, magnesium, and are rich in fibre. Blueberries are rich in antioxidants, phytoflavinoids, vitamin C and K. And muffins? Well, they’re just delicious and they make the perfect vessel for the two combined.

Quantity

Makes 18, suitable for freezing.

Ingredients

  • 2 medium bananas (mashed)
  • 1 egg
  • 125ml water
  • 2 cups wholemeal spelt flour
  • 125ml olive oil
  • 1 tsp bicarb soda
  • 2 ½ teaspoons baking powder
  • 1 cup fresh frozen blueberries

Method

Prep: 15 minutes
Cook: 15 minutes

  1. Preheat oven to 180 degrees, then prepare the muffin cases
  2. Combine bananas, egg, water and oil in a large bowl
  3. Mix in flour, bicarb soda and baking powder – mix until smooth (the bananas will make it look lumpy, but that’s ok)
  4. Gently fold in the blueberries
  5. Portion out the mixture into the muffin cases and bake for 15 minutes
  6. Take out of the oven and place onto a wire rack to cool

Serving tip: Serve with Greek yogurt
