Recipe: Salmon breakfast sandwich

A five-ingredient recipe that’s nutritionally balanced and full of flavour? Yes, please! This salmon breakfast sandwich will kick start your day in the right way, keeping you fuelled and focused throughout the day.

Disclaimer: This “breakfast” recipe is so delicious and easy to make that you may end up on your plate at lunch (and dinner) as well…

You can stash these sandwiches in the fridge or to keep the sandwich party going for longer, keep them in the freezer and reheat them when you’re ready.

Ingredients:

  • Cooking oil spray
  • 90 g smoked salmon
  • ¼ cup sliced spring onion
  • 2 eggs (beaten)
  • 1 tbsp cream cheese
  • 1 whole wheat bun

Method:

  1. Preheat the oven to 425°F / 220°C. Spray a casserole dish with cooking spray.
  2. Cut the salmon into chunks and slice green onions. Add to the casserole dish, spreading the mixture into an even layer to prevent large clumps.
  3. In a bowl, beat eggs until lightly frothy. Season with salt and pepper. Pour egg mixture into a casserole dish and bake in the oven for 35-45 minutes (or until the centre is just set).
  4. Allow the egg sheet to cool fully before cutting into portions.
  5. Assemble the sandwiches by spreading buns with cream cheese. Place a portion of egg inside each bun.
  6. Serve straight away or once cool, individually wrapping the sandwiches in a reusable wrap.
