Recipe: Spinach, halloumi, and pesto pizza

What’s savoury, green, and so delicious that you’ll want to introduce it to your family and friends? This spinach, halloumi, and pesto pizza!

Spinach, halloumi, and pesto are an unbeatable flavour combination – aside from that, this recipe makes getting enough veg into your diet a breeze. Nutrition graduate, Lani Finau shares her crowd-pleasing recipe that’s super easy, healthy and delicious.

Time: 40 minutes
Allergens: Gluten, nuts

Ingredients

  • 1 wholemeal pizza base
  • 2 tablespoons basil pesto (store-bought or homemade)
  • 1 cup of baby spinach
  • 1 zucchini, sliced
  • ½ red onion, sliced
  • 100g of halloumi, crumbled
  • Balsamic vinegar, to drizzle
  • Olive oil (to drizzle)
  • A handful of basil leaves (to top)

Method

  • Preheat the oven to 180°C
  • Spread pesto over the base of the pizza
  • Top with baby spinach, zucchini, red onion and halloumi
  • Bake in the oven for 20 minutes
  • Drizzle with balsamic vinegar and olive oil, then top with basil to serve
